Established in 1903, the founder was a close friend of Yataro Iwasaki, the founder of Mitsubishi, also from Aki city. Akitora is made with the pure subsoil water of the Akano River that is famous in the region for its delicious sweetfish. The water has a mellow flavor that offers a more rounded, soft to dry sake. The brewery's motto is "Harmony with food." They want to create sake that can be enjoyed on its own, and can also offer the true sake flavor when enjoyed with food.
