The concept of "EMISHIKI", which claims sweet sake supremacy, was brought about by Atsunori Takeshima, a heretic in the sake industry who became the fifth-generation brewer in 2009. He started by questioning the current sake brewing norms, a stance that stems from his insatiable quest for sake as a sake enthusiast, which can be dangerous and borderline insane if taken wrongly, and leads to his belief in breaking the mold and creating new values. The company's goal is to create "a new and delicious form of sake", which is reflected in the novelty of its label design, catchy titles, and innovative sake recipes, resulting in poppy sake that is a true delight to drink. It is hard to keep up with the speed at which the lineup changes every year, but this is one of the factors that make EMISHIKI so appealing.
