Good sake can be found in "maturity." Kinmon Akita Sake Brewery was established in 1973. They discovered the future of sake in "matured sake," which skillfully extracts the unique essence of umami that is exclusive to sake, utilizing Akita's climate and terroir, along with the techniques and expertise. Its predecessor company, Akita Fuji Brewery, was famous for its sake "Akita Fuji," which was loved by people from Akita who had crossed the Tsugaru Strait to develop Hokkaido. Mr. Takashi Sasaki, the president of Kinmon Akita Sake Brewery, embraces this legacy and is devoted to exploring new dimensions in the world of sake. In his words, "Expanding our ideas means going beyond the taste evaluation of sake. It's an exploration of new flavors," says Mr. Sasaki. Seeking a breakthrough towards the new world, the brewery allows the sake to mature gracefully as time passes.

Origin
As sake ages, it develops various amino acids that enhance its flavor profile, and its color deepens to an amber or bright yellow, resulting in a complex, refined taste and a lasting aftertaste. The color "Yamabuki" (山吹色), indicative of sake that has reached delicious maturity, is aptly chosen as the brand name for this sake.
