Founded in 1863, this five-generation brewery is located between the Tone and Watarase Rivers and has fertile soil with an abundant water vein. The brewery uses this mineral-rich hard water from the surrounding rivers. In order to produce sake with a deep yet sharp flavor, the traditional Yamahai method of sake brewing is applied. The harsh cold winters with a gusty wind have allowed the sake to develop a quality that is delicious when heated.

"We have always wanted to brew sake that we would like to drink, and we will continue to do so in the future, without being influenced by the times." is their motto for brewing sake. The sake produced with this idea shall not be glamorous, but has a character that makes you keep on drinking it, and you will find yourself enjoying it over and over again. The brewery's persistent adherence to the old-fashioned small-batch, handmade brewing method and production volume is an expression of the brewery's determination to produce the sake that they want to drink.
