This sake is a true embodiment of the brewery’s concept: a domaine-style approach where every step, from rice cultivation to brewing, is handled in-house. Unlike conventional sake, which is typically classified by brewing methods or rice polishing ratios, this brand focuses on expressing the terroir of the rice harvest year in a simple and intuitive way. The 2021 vintage features an exceptionally smooth and delicate flavor, with a clean, seamless finish. When gently warmed, its sweetness becomes more pronounced, revealing a richer, more layered profile. It still shows promising potential for further aging.
