"Tono No.1" is a rare and legendary rice variety developed to suit the climate of Tono, with "Kame no O" as its parent strain. To make full use of this rice, lovingly cultivated in-house without pesticides or fertilizers, the brown rice is only lightly polished, while the rice bran removed during polishing is roasted with rice straw and added back into the brewing process. This is the world’s first sake brewed in such a way, with no added yeast or lactic acid. Instead, it is crafted in wooden vats using the ancient “mizumoto” starter method dating back to the Muromachi era, resulting in an unfiltered, unpasteurized, undiluted sake made entirely without additives. The result is an extraordinary expression: smoky flavors that capture the essence of the earth, the natural sweetness and umami of organically grown rice, and a bold acidity born from wild yeast and lactic acid bacteria—all interwoven into an unparalleled, one-of-a-kind world of flavor.
