Founded in the first year of the Genroku era (1688), the brewery stands in the port town of Shijiki-cho, Hirado City, where the words of its founder, Chojibeemon Fukuda, "Sake brewing is done with heart, and nurtured by the wind," still resonate today. The 15th-generation brewery owner, Tatsuya Fukuda, is preserving tradition while embracing new challenges, aiming to brew sake that embodies the unique beauty of Shijiki Bay, a precious and unparalleled sea in southern Hirado. The sake is carefully bottled as unfiltered and undiluted to avoid placing stress on it after pressing, and undergoes quick pasteurization in the bottle to create a fine natural effervescence. Its sake is a unique expression of Shijiki Bay, delicate yet dynamic. The refined flavor, created to pair perfectly with seafood, has been rebranded from the original label "FUKUDA" to the new "FUKUUMI" further elevating its brilliance. With ongoing research into marine lactic acid bacteria from Hirado's seawater, future developments are not to be missed.
