Introduction

The only still sake produced by Mori No Brewery, which specializes in sparkling sake. Made from organically grown Nanatsuboshi rice from Rankoshi, Hokkaido, and brewed in traditional Yoshino cedar wooden vats (kioke), this sake emphasizes the natural aromas and flavors derived from rice, koji, lactic acid bacteria, and the wooden vats, rather than relying heavily on the fruity aromas produced by yeast. Complex yet delicate, this sake offers the purest expression of Mori No Brewery's philosophy and approach to sake brewing.

Layers of umami are complemented by delicate white peach aromas and refreshing citrus notes. As the flavor develops toward the finish, a subtle bitterness and distinctive character from fermentation in wooden vats emerge, bringing elegance and balance to the overall profile.
