Introduction

UPAS means “snow” in the language of the Ainu, the Indigenous people of northern Japan, particularly Hokkaido. The fine lees drifting through the glass with the bubbles evoke powder snow settling in the northern forest. This is an expressive sparkling sake brewed in Yoshino cedar kioke using organically cultivated Nanatsuboshi rice and finished through secondary fermentation in the bottle. With delicate bubbles and a clear, refined profile, UPAS is the perfect introduction to the world of Mori No Brewery.

Fine bubbles carry savoury umami from the delicate lees, with fresh aromas of green apple and citrus. A subtle bitterness from the Yoshino cedar kioke tightens the finish, bringing umami, acidity, bubbles and gentle wooden notes into balance. Dry-leaning and food-friendly, it is crafted as a distinctive sparkling sake in its own right. UPAS means “snow” in the Ainu language; the white lees drift like snow falling through a Hokkaido forest.
