The Brewery
Shimizu Seizaburo Shoten, founded in 1869, is located in Suzuka, known for its Formula One track. This area, rich in clear subterranean water from the Suzuka Mountains and quality rice from the Ise Plain, once had a flourishing brewing industry. Now, Shimizu Seizaburo Shoten is the only brewery left. Using local Mie rice, they brew year-round on a small scale, aiming for a light sake that pairs well with diverse cuisines. Former soccer star Hidetoshi Nakata loved their sake and visited the brewery.
