The Brewery
Founded in 1877 in Tosa, Kami City, the brewery is now led by sixth-generation brewmaster Kosuke Arisawa and his wife. The brewery has earned numerous awards, including consecutive gold medals at national and regional sake competitions. Their motto is "Carefully craft sake until pressing, but do not alter the sake after pressing." The sake is pressed using a traditional wooden press, bottled unfiltered, rapidly cooled after pasteurization, and stored at ice-cold temperatures to preserve its original flavor, resulting in a delicious, fresh-tasting sake.
