Introduction

Unlike the regular HAGI NO TSURU line, it has a gorgeous pineapple aroma and elegant sweetness. This is a special unpasteurized undiluted version of the popular summer-oriented "Cat Label" sake. It has a pleasantly fresh, ramune-like sweet and sour taste, and a sense of rush created by the gaseous sensation that comes from the swirling, popping gas. It is bottled immediately after pressing to maintain the freshness of the unpasteurized sake. The aftertaste is slightly astringent and disappears. Like the cat on the label, you want to enjoy it leisurely under a "kotatsu" (a Japanese low table covered with a futon). Limited label available only once during the winter season.

The Brewery

Kannari Arikabe, once known as "bush clover village" for its beautiful Hagi flowers, is a historic sake brewery in Miyagi, Japan, established in 1840. It was among the first in the region to innovate, such as creating specially designated sake and using refrigerated storage. In 2002, current owner Yohei Sato introduced the "Hiwata" sake brand, specializing in the traditional Kimoto brewing method. The brewery's other brand, "Hagi no tsuru," uses the Sokujo method, with at least one experimental tank each year. The brewery aims for a rich yet balanced flavor, achieved through advanced brewing and storage techniques.
