The Brewery
Kannari Arikabe, once known as "bush clover village" for its beautiful Hagi flowers, is a historic sake brewery in Miyagi, Japan, established in 1840. It was among the first in the region to innovate, such as creating specially designated sake and using refrigerated storage. In 2002, current owner Yohei Sato introduced the "Hiwata" sake brand, specializing in the traditional Kimoto brewing method. The brewery's other brand, "Hagi no tsuru," uses the Sokujo method, with at least one experimental tank each year. The brewery aims for a rich yet balanced flavor, achieved through advanced brewing and storage techniques.
