Introduction

Test brew turned to a popular regular product. The dry sake (SMV of +14) is known for its label that looks like a character from the manga “Slam Dunk”. With the combination of Yamada-Nishiki and No. 9 yeast, the brewery created a unique sharp sake with retained umami and low alcohol content. You will fall in love with its sharp, edgy profile and well-honed, yet somehow playful flavor.
