Story
“Sake brewing is a combination of science, taste, and passion!” is the motto of this talented brewery, which excels at both scientific and traditional approaches. The brewery abolished the “Toji” (brewmaster) system over a decade ago and the brothers have been brewing sake together since then.
Their product lineup is characterized by a very wide range of products, from highly aromatic sake using modern brewing techniques to rich sake utilizing the traditional Yamahai fermentation starter method. The brewery has won gold medals at the National New Sake Competition, as well as at the Fukuoka National Taxation Bureau's renowned high-level sake competition (a joint sake tasting by sake brewers from Fukuoka, Nagasaki, and Saga Prefectures), and plays a leading role within the upcoming Fukuoka's sake breweries.
