Introduction

This classic brew is crafted with the traditional Yamahai fermentation starter method and uses the reintroduced "Kokuryo Miyako", which was valued for sake brewing in the Chikugo region in the first half of the 20th century. The rice variety is very difficult to cultivate, and its cultivation ceased after the war, making it phantom sake rice.

The Brewery

They've won gold medals at the National New Sake Competition and at the Fukuoka National Taxation Bureau's prestigious sake competition. The brewery is a leading player among Fukuoka's emerging sake producers.
