The Brewery
Tomita Brewery, founded over 460 years ago during the Tenbun era, is one of Japan's oldest sake breweries. Located in Shiga, near Lake Biwa, the brewery is led by its 15th-generation brewmaster, who resembles actor Tadanobu Asano. Their sake has a robust flavor inspired by the Warring States warriors and beautifully showcases the rice's taste. The brewery operates from an Edo-period warehouse and is committed to preserving its environment. Since 2001, they've partnered with local farmers to grow Shiga rice varieties and experiment with pesticide-free and low-pesticide cultivation.
