The Brewery
Sumikawa Brewery, led by Mr. Sumikawa, a talented young brewer who trained at Takagi Shuzo, produces exceptional sake from locally grown unique rice varieties. Their brand, "Toyo Bijin," aims to be "clear water that has passed through the rice plant." In 2013, a torrential downpour caused devastating damage, burying the brewery under nearly two meters of earth and sand. However, with the help of volunteers, the brewery made a remarkable recovery and, while slowly returning to previous production levels, continues to evolve with a passion for sake brewing.
