Toyo Bijin's highest quality sake, which had been discontinued since the devastating landslide disaster in 2013, has been revived. This Junmai Daiginjo is made by 40% Aiyama, which is also known as the diamond of rice and its subtle sweetness, and fermenting slowly at low temperatures.
