Introduction

A sharp and stoic image of Kamokinshu gives way to a completely different personality that bursts with a sweet and tangy taste. This kioke apple was created during the process of using wooden barrels, which had been resting in the brewery, since 2018. By using yeast that produces a high amount of malic acid, along with Omachi rice brewed in wooden barrels, this sake is characterized by its woody aroma, a sweet body with complex depth, and an intense acidity that tightens the finish.
